Spicy griddle cabbage
Overview
Cabbage is often eaten at our house, stir-fried, minced with garlic...it's all relatively bland. This time I made a dry-cooked cabbage with homemade garlic and black bean chili sauce, and it tasted delicious! When I took out the bento from the microwave at noon, my colleagues were so fragrant... Well, green leafy vegetables and the like are only suitable for fresh cooking and eating. I am a lazy person and crawled away with the pot lid on my head...

Ingredients
Steps
-
Soak the cabbage in water for a while, tear it into pieces, wash it and set aside; for a medium-sized cabbage, tear one leaf into 3-4 parts;
-
Prepare shredded ginger, green onion segments, garlic (whole), dried red pepper segments, and Sichuan peppercorns;
-
Pour water into the pot and bring to a boil, put the cabbage into the pot, blanch the water, take it out, take a shower and drain; the whole process should be very quick. Blanch the cabbage in water so it won't change color easily when stir-fried. If you blanch the cabbage for too long, it will lose nutrients and the color will not look good. Showing it quickly is also to prevent the cabbage from changing color;
-
Pour an appropriate amount of oil into the hot pot, add Sichuan peppercorns, fry over low heat until fragrant, and discard the Sichuan peppercorns;
-
Add shredded ginger, green onion segments, garlic (whole), dried red pepper segments, and stir-fry over low heat until fragrant;
-
Add cabbage and stir-fry quickly over high heat;
-
Add homemade garlic and black bean chili sauce and stir-fry evenly;
