Honey red dates and bitter melon segments
Overview
The bitter melon tree planted in my mother's courtyard has been growing hard, and my mother left most of the fruits it grew to me. Every time, I change the method of making bitter melon. The small bitter melon is really magical. It can produce many different delicacies and bring you different surprises.

Prepare materials.

Cut the bitter melon into sections about the size of two jujubes.

Rinse the red dates with water and soak briefly.

Scoop out as much of the core of the bitter melon as possible.

Soak in light salt water to remove part of the bitter taste.

Use a knife to remove the core from the red dates.

Roll up from one end to the middle and roll tightly.

Pinch the dates tightly and stuff the bitter melon from one end inward until it is completely filled.

Use a knife to remove any excess.

Cut into small pieces. (Please choose the thickness according to your own preference. If you can endure hardship, you can cut it thicker)

After serving, drizzle with honey.
