After cleaning the scallops, remove the scallop meat, wash and drain.

Chop the soaked ginger, sea pepper and garlic into pieces, and cut the soaked vermicelli into long sections.

Heat 50% of the oil, add Sichuan peppercorns, soaked ginger, soaked sea pepper and garlic and saute until fragrant;

Add vermicelli and stir-fry;

Over high heat, pour in the scallops;

Stir fry quickly for about 30 seconds and it is ready to serve.
