Fried Bean Curd with Bacon
Overview
This is the yuba from my hometown. It has a more bean flavor and texture than the ones bought outside. There are many ways to eat yuba, but I prefer to fry it, just for the tough texture

Soak the yuba in cold water first. The bacon is relatively salty. Blanch it in boiling water for three minutes

Tear the yuba into small pieces, cut the garlic into sections, and slice the bacon

Heat the pan, add oil, and add chopped raw garlic

Stir-fry, then add the bacon, stir-fry out the oil over low heat, and serve

Do not put any more oil in the pot, pour in the yuba and stir-fry, add a little salt and some light soy sauce to taste

Pour in the bacon and green garlic and continue to stir-fry
