I love the wild leopard print, so I was tempted by Wang Guangguang’s leopard print cupcakes, and I quickly pulled the weeds. . . The recipe is my usual cup cake recipe that won’t crack or collapse, and the result is perfect without cracking or collapsing

Make egg yolk paste. Mix fine sugar, egg yolks, and whole eggs evenly and beat thoroughly. Mix the egg yolk liquid and cooking oil and beat with a whisk until fully emulsified

Sift in the low-gluten flour; continue to mix with a whisk until a smooth and uniform batter without particles is set aside

Make meringue. Preheat the oven to 110 degrees 10-15 minutes in advance. Start beating the egg whites, add the sugar in portions, and beat until stiff peaks form. After lifting the whisk head, the tip of the egg whites will be straight

Use a spatula to divide 1/3 of the egg white into the previous egg yolk paste and mix evenly

Then pour the mixed batter back into the meringue

Mix the meringue and egg yolk paste evenly using the stirring and cutting techniques

Take two equal parts of the batter into a bowl, add cocoa powder to one part and black cocoa powder to the other part, mix well

The cocoa batter and dark cocoa batter are also put into piping bags respectively, and the piping bag has a small opening

Put the original cake batter into a piping bag

Squeeze the mold into the mold until it is 80% full. After shaking it a few times, the big bubbles in the batter will pop out

First use cocoa batter to draw patterns of different shapes

Then use black cocoa batter to outline the edges of the pattern

Place in the middle and lower racks of the preheated oven, 110 degrees: 25 minutes

Then set the temperature to bake at 120 degrees for 10 minutes; at 130 degrees for 5 minutes; and at 150 degrees for about 10 minutes. If you feel the coloring is not enough in the end, you can adjust the temperature to 180 degrees and bake for 1-2 minutes

Finally, do not take it out immediately. After the oven is powered off, wait 5 minutes before taking it out
