Dried bamboo shoots are actually not too dry. In order to preserve their freshness, there is a layer of salt grains on the outside, which makes them very salty.

Cut off the hard part of the roots of the dried bamboo shoots, split them lengthwise and clean them. Cut into pieces and soak in warm water, changing the water three or four times to fully remove the excess salt taste.

Slice bacon.

Heat the pan with cold oil and fry the bacon until fragrant.

Add chopped green onion and minced ginger, sauté until fragrant, and add appropriate amount of boiling water.
