Cut green onions into sections. Slice cucumber and set aside.

Blanch the mutton. Be sure to blanch it in water and never over-oil it. This is more tender and smooth.

Dish out and set aside.

Add oil to the wok, heat the oil and sauté the green onions until fragrant.

Then add the mutton and vegetables and stir-fry.

Add the oil (no need to add other seasonings) and continue to stir-fry evenly.
