Put the dried fungus in warm water and soak it for half an hour. Put water in the pot and boil the fungus for ten minutes. Remove and drain. Tear into small pieces and set aside (you don’t need to tear the smaller fungus. It’s to enhance the flavor)

Shred the ginger and garlic, cut the chilli padi into sections, and cut a fresh lemon into slices and set aside

Put the chopped ginger, garlic, and pepper into the reserved fungus, add an appropriate amount of sugar, mustard, salt, mature vinegar, soy sauce, squeeze a dozen drops of lemon juice, stir evenly, and serve on a plate (mix well and cover with plastic wrap and put it in the refrigerator for about an hour for a better taste)
