【Golden Cheese Yogurt Toast】
Overview
I was lucky enough to try out a powerful chef's machine. I made a cake roll first, and then made toast the next day. However, it was my first time to use a chef's machine to make dough. I was really inexperienced. It took me a long time to finally get the dough ready. . . I won’t tell you the hardships one by one~ Just come and see the finished product~~ Ingredients: Dough: 240g high-gluten flour, 10g golden cheese powder, 120g yogurt, 44g egg liquid, 20g butter, 3g salt, 30g fine sugar, 4g yeast. Crispy grains: 15g powdered sugar, 25g low-gluten flour, 3g milk powder, 20g butter

Pour all ingredients except butter into mixing bowl

Then place the bucket on the kitchen machine and secure it, and install the dough hook of the kitchen machine

Close the machine and close the lid of the mixing bowl

Turn on the power and turn the knob to level 1. After all the ingredients in the bucket are mixed evenly, turn to level 2 and continue mixing. After the dough is beaten until it becomes chewy, add butter cut into small pieces

Continue mixing at speed 2 until the dough can pull out a large film

Peel off the dough attached to the dough hook, take out the mixing bucket, slightly arrange all the dough into shape, and cover the surface of the bucket with a layer of plastic wrap for basic fermentation

Basic fermentation completed

Place the dough on the kneading mat and knead to deflate

Then divide into three parts, roll into balls and let rest for 10 minutes

Roll the rested dough into an oval

Press the long side thin

Then roll it up from the other end and pinch to seal

Slowly roll the dough until it is about 40cm long

Roll all three doughs into long strips

Put them together and make a braid

Then fold the two ends in half and pinch the interface tightly

Place the shaped dough with the seam side down into the toast mold for secondary fermentation

Make crispy nuggets while the dough is fermenting: Pour all the ingredients needed to make crispy nuggets into a small basin and knead evenly

Let the dough ferment until 8~9 minutes full

Brush a thin layer of egg white on the surface, then sprinkle an even layer of crispy chips

Place in the lower shelf of the preheated oven at 190 degrees for 30 minutes

Unmold immediately after taking it out of the oven, let it cool and store it in a sealed container
