Cut the fish meat along the bones and set aside. Soak the onions, ginger and peppercorns in sweet rice wine and set aside.

Use a knife to scrape off the fish paste along one side.

Place the scraped fish meat on the chopping board and continue to chop it finely with a knife. It will take about 15 minutes. Be sure to chop the fish meat very finely.

Add egg white, starch, green onion, ginger water and salt to the good fish meat and stir.

Be sure to stir in one direction, the stronger the stirring, the better.

Put the mixed fish paste into a piping bag and cut a small opening in the front of the bag. (The opening should not be too big. Cut it smaller first. If it is difficult to squeeze, then slowly cut the larger opening.)

Squeeze the minced fish into cold water to form a fishing line, the length is whatever you want.

After everything is squeezed in, turn on low heat and cook slowly.

The fish noodles are ready, you can eat them any way you like.
