Hand-made noodles with diced eggplant meat
Overview
Eggplants and peppers are relatively popular vegetables in summer. They are simply stir-fried with some meat and topped with noodles. They are very fragrant and not greasy at all. The nutrients are all in the bowl, and they are delicious.

Cut the meat into small dices and marinate it with cooking wine, light soy sauce and starch

Cut the eggplant into strips, cut the pepper into shreds, and cut the tomatoes into small pieces

Pickle the pepper with vinegar, salt and sesame oil. It will be very appetizing to eat with noodles

Marinate the diced meat and stir-fry it in hot oil

Fry the meat until it changes color and release the fat

Add garlic and ginger

Add the sliced eggplant and stir-fry evenly

Add tomatoes and stir-fry

Fry the eggplant until soft and pour some oyster sauce
