My wife is famous among family and friends for her fat cake without sugar, eggs or milk. It is made directly from cooked pumpkin and flour and fermented with an appropriate amount of yeast powder. The traditional method is to add alkali and then steam it directly in the pot. Here we take the fermented soft noodles, add an appropriate amount of soda water, then put it into the steamer for secondary fermentation and then heat and steam it. The steamed cake looks like a massage technique. After pressing hard with your hands, press it to the bottom and then release it. It will quickly and automatically bounce back to its original state.   4. After the dough has fermented enough (it will almost become a viscous slurry), slowly add an appropriate amount of alkali and baking soda mixed aqueous solution. Stir continuously with a bamboo spatula. When you feel that the dough has become thicker, use a rice plate to carry some batter. When the batter naturally flows down, it will shrink and become elastic when it is disconnected. Stop stirring and pour it into the steamer basket. The warm water in the pot will ferment naturally for a second time.

  5. When fermentation reaches twice the size of the puree, heat it up. After steaming for 20 minutes, stop the fire and cover for three minutes. Take it out and put it on the panel to cool down naturally
