Sautéed Carp with Scallions and Ginger Scales

Sautéed Carp with Scallions and Ginger Scales

Overview

In my childhood memories, going up to the river to catch fish and going down to the bay to catch shrimp were our most interesting sports at that time. I remember that there were many fish and shrimps in the rivers, bays and ponds at that time. Although I would catch many fish every time and take them home, my parents would inevitably scold me because at that time there were not many people in our hometown who knew how to cook and like to eat freshwater fish. Every time I come back from catching fish, my clothes will be dirty. Fortunately, in summer, the clothes will dry immediately after washing. If it is winter, the clothes I wear may be the only winter cotton clothes. If they are dirty, there will be no replacement. The rest is a scolding from your parents. Not only will they dump the fish for you, but you will also be punished by being forced to stand. Even so, it is still difficult to shake my desire to catch fish in the pond. The fish will still be caught, and the punishment and punishment will still continue. I remember one winter, the water in a pond on the way to school dried up in winter. On a relatively warm day, the ice melted quietly, and the fish at the bottom showed their faces that they had not seen for a long time. We were discovered by us who were returning home from school. The remaining result was that the shore was littered with shoes, and the pond immediately became a sea of joy. That time my friends and I all came back with a full load, because there was no equipment to hold the fish. The only trousers worn outside the cotton trousers were temporarily tied up and turned into a fish basket filled with twenty or thirty crucian carp of about half a kilogram. As you can imagine, after returning home, all the fish were thrown away, and the dinner that day was also missing. As I work outside for longer periods of time, I still don’t like freshwater fish at first, I still don’t like its earthy smell, and I still like to eat sea fish. In the end, my love for freshwater fish started when I went to my father-in-law’s house and ate the freshwater fish cooked by my happy second aunt. From then on, I slowly started to like freshwater fish, and then I realized that the strong earthy smell of freshwater fish was caused by improper handling. As long as I find the trick, cooking freshwater fish is also very delicious!
