Fried pork with fungus
Overview
Fungus, which refers to black fungus, is quite delicious, but I rarely eat it. Growing up, I ate it most at rural banquets. I don’t know why. This year when I went up the mountain during the Qingming Festival, I came across a piece of wood with a few fungus growing on it. They picked it back and fried it for lunch. It was so crispy that no one had ever seen it before. Wasn't it said that fresh fungus cannot be eaten? But why is it so delicious? They said it’s because it’s grown in the wild. They don’t know if it’s true or not. Anyway, it’s so delicious. I still miss it now😁.

Soak black fungus in cold water.

Prepare the pork and marinate it with light soy starch and oil.

Wash the soaked fungus and tear into appropriate sizes.

Prepare ginger, garlic and onions. The old man in my family obviously grows green onions on the roof of the building. He just goes up to pick them when he wants them. But he still likes to pick them and put them in the refrigerator, so I often have to work hard to consume them. There are too many, and it makes me cry when I am cutting them.

Heat oil in a pan, add ginger and garlic and sauté until fragrant.

Add pork and stir-fry.
