Matcha Cookies

Matcha Cookies

Overview

Cookies are the basic foundation for baking. As long as the proportion of ingredients is appropriate and the baking temperature and time are well controlled, it is very easy to eat homemade cookies without additives. Matcha flavor is a favorite of many girls, and I am a matcha lover! The sweetness also has a bit of bitterness from the tea, which is just enough to relieve the sweetness caused by the biscuits.

Steps

  1. Cut the butter into small pieces and put it in the microwave. Let it melt over low heat for about 2 minutes. If there is still some butter that has not melted after taking it out, you can stir it and the residual heat will melt it.

  2. Add fine sugar (powdered sugar can be used) in about 2 batches and beat in one direction until it resembles a picture.

  3. Beat the eggs whole. If you like it a little crisper, you can use only the egg yolks.

  4. Pour the egg liquid into the whipped butter in 2 batches and mix evenly in one direction.

  5. In order to remove the fishy smell brought by the eggs, add a few drops of lemon juice. Do not add too much to the matcha cookies, otherwise it will have a sour taste. If you like the milky flavor, you can also add a few drops of milk or some cream.

  6. Add the matcha powder in 2-3 batches. If you don't like sifting, it will be a little more troublesome. Add more or less according to your preference. Adding too much matcha will make the bitterness of the matcha very strong.

  7. Add the matcha powder and stir evenly. The color should be even and lighter than initially.

  8. Add low-gluten wheat flour in 2-3 times, and stir evenly from bottom to top. Do not use a stirrer, otherwise the green tea powder will separate out a large amount of butter, and the noodles will be tough.

  9. Put the dough into a piping bag with a piping nozzle and squeeze it out. You can choose different piping nozzles according to your preference! ~

  10. Put it in the middle rack of the oven (if it's an old-fashioned single-tube one like mine, just put it on the bottom rack), set it at 180 degrees for 10 minutes, and then adjust it to 160 degrees for 5 minutes. The time and temperature will depend on your oven.
