Prepare lotus root, wash and peel off the skin

Cut into 3mm thick, too thick and not easy to taste, too thin, easy to break and not crispy

Blanch until the lotus root slices change color, about 3 to 5 minutes, depending on the heat

After blanching, drain out the water, add 2 tablespoons of salt and mix well

Crush the peppercorns and put them into a bowl together with the chili rings. Heat the oil in the pot until it is 80% hot, pour it on top and fry in the spicy oil
