  1. Prepare lotus root, wash and peel off the skin

  2. Cut into 3mm thick, too thick and not easy to taste, too thin, easy to break and not crispy

  3. Blanch until the lotus root slices change color, about 3 to 5 minutes, depending on the heat

  4. After blanching, drain out the water, add 2 tablespoons of salt and mix well
