Put the yeast powder into a bowl, pour in an appropriate amount of water, stir evenly and let it sit for 10 minutes (the temperature of the water must not exceed 40 degrees, otherwise it will affect the fermentation of the dough)

Put the sugar into the flour and mix well, then slowly pour the yeast water into the flour, stirring with chopsticks while pouring, until there is no excess dry flour in the basin. Then, knead into a smooth dough.

Cover with plastic wrap and let rise for 1 hour.

The dough is ready when it has doubled in size. (At this time, you can see that there are N honeycomb-shaped holes in the dough.)

Remove the dough from the bowl and knead until the surface is smooth.

Knead the dough into a long strip, then cut into 18 small pieces of 15g and 5g. (15 grams of dough is used to make the caps of shiitake mushrooms, and 5 grams of dough is used to make mushroom stems.)

Take a 15g piece of dough, roll it into a ball and flatten it, then put a spoonful of bean paste in the middle, as shown in the picture.

Put the small dough cake into the cocoa powder, so that one side of the cake is covered with cocoa powder.

After everything is sticky with cocoa powder, roll 5 grams of small dough into a long strip, then put it into the steamer together and let it ferment for another 10 minutes. After the fermentation is completed, bring the water to a boil over high heat, then turn to medium-low heat and steam for 10 minutes, then turn off the heat and simmer for 5 minutes.
