Jujube cake
Overview
Children don't like to eat red dates, but they like to eat jujube cakes. But I’m always worried about buying from outside. Do it yourself. The results were unexpected. The taste is no less than eating out. It is safe to eat without additives.

Boil the red dates in water until the water is almost dry. Take it out and core it. Add milk in a food processor and blend until it becomes a paste as shown in the picture.

Add the egg yolks to the oil and mix well, then add the red date paste, sift in the low flour and mix well and set aside. Beat the egg whites and brown sugar in batches. Add cornstarch one last time. Pull the whisk up until it reaches a straight point and stop. First add 1/3 of the egg yolk paste and mix well, then pour it back into the egg white bowl and mix well.

Put some water in the baking pan and preheat the oven to 140 degrees. Bake for 50 minutes over high and low heat.

After baking, poke it with a toothpick and it will come out of the oven.

The water bath method produces a lot of moisture. Softer. The finished product is not dry at all. Delicate taste. The jujube aroma is strong.
