Soak half a day in advance, add salt and a little sesame oil

Minced garlic, ginger, dried chili, minced green onion, set aside

Sauté ginger, garlic and scallions in a hot pan

Pour in the washed clams and stir-fry

After frying for a while, add dried chilies and continue frying

Pour in the cooking wine, soy sauce, salt and chicken essence. Just before taking it out of the pan, add in the minced green onions and stir-fry
