1. 1 Cut off the bottom of the enoki mushrooms, wash and squeeze out the water and set aside

   

2. 2 Add starch, flour, cornstarch to eggs in a ratio of 3:1:1, add water and vegetable oil to make a paste

   

3. 3 Heat oil in a hot pan until it is 70% hot
