Wash the peppers.

Finely chop the peppers, or crush them in a food processor.

Chop onions, ginger and garlic.

Heat the wok and pour more vegetable oil.

After the oil is hot, add onions and minced garlic and sauté until fragrant.

Add the chopped chilies and stir-fry quickly.

After the peppers are raw and change color, add salt, soy sauce, pepper powder, vinegar and chicken essence, and stir-fry evenly.
