Wash the prawns and cut off the whiskers, remove the shrimp threads and set aside

Mince ginger and garlic, a teaspoon of bean paste, a handful of chili peppers, and finely chop green onions (I forgot to take a photo of the green onions)

Pour an appropriate amount of base oil into the pan and heat it until it is 70% hot. Fry the shrimp until they change color and take them out

When the oil is 70% hot again, fry the shrimp again until golden and crispy. Remove and control the oil and set aside

Leave a little oil in the pot and sauté the pepper until fragrant

Add minced ginger, minced garlic and bean paste and stir-fry until fragrant

Sauté the chili until fragrant

Stir-fry the fried shrimps over high heat and add a teaspoon of cooking wine

Add 1/3 teaspoon chicken powder to taste

Sprinkle in the chopped green onions and stir-fry evenly before serving
