Passion fruit cake & coffee cake
Overview
Some friends say that making cakes is too complicated, but it is easier to buy them... In fact, it is not complicated at all to make, it is simple, healthy and does not have many calories. I made two flavors at the same time, the coffee is rich and delicate, and the passion fruit is sour and sweet. One breakfast and one afternoon tea, easily done.

Prepare ingredients.

Mix coffee powder, 2 egg yolks, 50ml milk, 40g flour, and a spoonful of sugar, then sift (other friends sift flour into the egg yolks, I think the cake will be more delicate if sifted later).

Passion fruit (you can sift without seeds), 2 egg yolks, 30g milk, 60g flour, stir and sift, I left the seeds.

Preheat the oven to 150°C with upper and lower heat. The egg whites can be kept in the refrigerator at first. After the egg yolks are ready, they can be taken out and beaten, which will make them faster. Beat 4 egg whites with a spoonful of sugar and 2 drops of white vinegar quickly until they form large bubbles and turn white, then add the remaining sugar.

Beat until it has a sharp point.

Divide the egg whites into 2 equal portions: add 1/3 of the egg whites to the passion fruit paste and mix evenly, then add the remaining 2/3 of the egg whites and mix evenly.

For the other half of the egg whites: add 1/3 of the egg whites to the coffee paste and stir evenly, then add the remaining 2/3 of the egg whites and stir evenly.

Pour the cake batter into the cup, shake it twice, and use a spatula to smooth the surface (I forgot 😂).

Enter the preheated oven and bake at 150℃ for 40 minutes (my oven is larger 30L and takes longer, smaller ovens can take a shorter time, it depends on the temperament of your own oven).

When the time is up, don’t take it out so quickly to avoid the temperature difference causing it to collapse. Take it out after it cools down slightly and start eating😍.
