Roasted pork with mixed mushrooms
Overview
When my friend returned to his hometown in Northeast China, he brought me a lot of wild mushrooms for his own cooking. He put them in the refrigerator and forgot to eat them. There are several kinds, including shiitake mushrooms, hazel mushrooms, oil mushrooms, and many other mushrooms that cannot be named. I randomly picked some mushrooms and pork belly and stewed them in a pot. The taste was indescribably fresh.

Soak and wash mushrooms until soft. Set aside.

Cut pork into cubes.

Heat oil in a pan and add sugar.

Fry over low heat until the sugar turns brown.

Add pork.

Fry until browned.

Add star anise and stir-fry until fragrant.

Add green onions and ginger slices and stir-fry until fragrant.

Add soy sauce, Maggi Xian, salt and water. Stir well.

The fire comes to a boil.

Cover and simmer over low heat for 50 minutes.

Add mushrooms and stir well.

Cover and simmer for another 25 minutes, turn off the heat and serve.
