Wash the melon, remove the head and tail, and cut into 2-3 mm thick slices (do not cut too thin)

Chop the onion into thick strips (I used half of a large onion)

Mince the ginger and garlic and set aside for later use (I fried them together with another dish, so I also cut them into pieces. You can add them if you like. I saved them because I already used them)

Put an appropriate amount of base oil in the pot (because I just finished frying a dish and the oil pot has not been washed, the pot is messy)

When the oil is 50% hot, add the onions and stir-fry until slightly soft

Stir-fry the onions for 2-3 minutes, then add the ginger and garlic and stir-fry until fragrant

Pour in the melon and stir-fry evenly

Add soy sauce and oyster sauce, stir-fry evenly

Add five-spice powder (can be replaced by Sichuan peppercorns or aniseed noodles), chicken essence and stir-fry evenly

Stir well and take it out of the pot (taste the saltiness before taking it out of the pot. I think the saltiness is enough after adding the previous seasonings. If you have a heavy taste, just add an appropriate amount of salt). Serve on the plate and eat
