This is the first time I handle all the fish myself. It doesn’t look very good, but it is guaranteed to be fragrant and delicious, and will not make you sick of it.

Because I eat it at home and don’t care about the appearance, I cut off the fins and tail of the fish. Cut 1 cm below the gills, pat the body loose with the back of the knife, and slowly pull out the fishing line. Make a few cuts on the fish.

Pour in enough oil for cooking, add Sichuan peppercorns, aniseed, and dried chili peppers. When the color changes, add onions and ginger. Add sugar. After the sugar color is cooked, add vinegar. The base is great. The aroma is amazing!

Pour water into the base, put the fish in, add an appropriate amount of salt, and wait until it comes out of the pot. The fish is very cooked, so don't overcook it. I cooked it for seven or eight minutes, turning it over once in the middle.

When it comes out of the pot, the presentation is really not good, the fish body was scratched too hard (•̀∀•́) but it is guaranteed to be delicious and not greasy.
