Tomato and egg mini dumplings
Overview
Tomato eggs are a favorite dish for children. A little sugar is added to the dumpling filling to neutralize the sour taste of tomatoes. My children don’t like onions, so I added some celery. The sweet and sour dumpling filling has a faint celery fragrance. The mini dumplings are small and cute, suitable for children to eat, one bite at a time.

Prepare ingredients for later use.

Add water to the flour and a little salt, and knead it into a slightly doughy dough.

Slightly blanch the tomatoes in boiling water, peel off the skin and cut into small pieces, chop the celery into fine pieces, fry the eggs and chop them finely.

Put all the chopped vegetables into a bowl, add olive oil, soy sauce, sugar, and a little salt and stir evenly.

Use a household dough press to flatten the dough into thin sheets.

Fold into small squares and press into discs using a small round mold.

Place stuffing in the middle of the dumpling wrapper. Fold the dumpling in half and pinch the edges tightly to wrap everything up.

Bring the water in the pot to a boil, add the dumplings and they are ready.
