This is a simple dish that almost everyone can make. In the past, the ingredients and shrimps were always boiled together, but Lao Yang’s method feels that the texture of the shrimps is more elastic, so I will do this in the future.

Wash the shrimps, remove the mud intestines, wash the green onions and tie them into knots, wash and cut the ginger into pieces;

Boil an appropriate amount of water in a pot, add onion, ginger, star anise, cinnamon, and peppercorns and bring to a boil. Add seasoning salt and cooking wine and cook for 10 minutes. Scoop out a bowl of water and let it cool;

Put another pot on the fire, add water and bring to a boil, add the shrimps, stir with chopsticks, cook until the shrimps are 90% red and turn off the heat;

Take out the shrimps, wash them with cold water, and put them into ice water to chill;

Then take out the shrimps and soak them in the water with the ingredients scooped out in the second step for more than 10 minutes;
