Northeastern stew
Overview
Northeastern stew is known as a hodgepodge, which involves stewing beans, potatoes, eggplants, green peppers, tomatoes, fungus and other vegetables together with the ribs until they are cooked. Northeastern stew is simple and easy to cook, contains both meat and vegetables, is rich in nutrients, and tastes delicious and fragrant. It is a common home-cooked dish in Northeastern China and one of the favorite New Year dishes for Northeastern people during the Chinese New Year.

Prepare materials.

Wash the ribs, cut into 4 cm long sections, and blanch them in boiling water.

Drain and set aside for later use.

Heat 2 tablespoons of oil and sauté star anise, green onions, garlic and ginger until fragrant.

Add the pork ribs and stir-fry for 3 minutes.

Add cooking wine, light soy sauce, and bean paste to the pot and continue to stir-fry evenly before heating the water. Bring to a boil, then reduce to medium to low heat and simmer, about 30 minutes.

Cut potatoes into cubes, cut corn into sections, cut carrots into cubes, and cut beans into sections. Stew until the ribs can be pierced with chopsticks. Add corn, potatoes, carrots, and beans and simmer for 5 to 10 minutes before serving.
