Stewed Frog with Winter Melon
Overview
Frog meat is a great tonic for vitality. It is rich in protein, calcium and phosphorus and is a perfect match with winter melon which clears away heat and removes dampness. This dish is a nutritious food for people with spleen deficiency, yin deficiency and edema. Frog meat is prone to parasite eggs, so the skin must be peeled and heated until the meat is cooked thoroughly.

Peel the winter melon and cut into 1.5cm thick strips, slice the ginger, season the frog meat with pepper, chicken essence, cornstarch, light soy sauce, cooking wine and salt, mix well and marinate for an hour.

Heat the pot first, then pour in an appropriate amount of oil, stir-fry the ginger until fragrant, add the meat and stir-fry until cooked, remove and set aside.

Add winter melon, add a little oyster sauce and fry for a while. Add appropriate amount of water, cover the pot and simmer for a few minutes

When the winter melon has almost absorbed the water, add the five-ripened frog meat and stir-fry together for 2 minutes.
