Overview

Today is Erfu, and we Northeasterners have the habit of eating noodles. I think it may be because of the unbearable heat in February that people think of this simple and refreshing food! ☺

Steps

  1. First wash and shred various vegetables, beat the eggs and fry them in a pan to form a thin egg skin and then shred them.

  2. Wash the bean sprouts, remove both ends and blanch them briefly in water. Cut the meat into thin strips and lightly marinate it with a small amount of salt, oil, cooking wine and starch for 10 minutes, then heat the pan with oil and stir-fry until cooked.

  3. You can fry or prepare various sauces according to your own preferences. I have two kinds of sesame sauce mixed with salt and fried minced pork sauce with miso.

  4. Fill the pot with water and bring to a boil, add a small amount of salt, then cook the noodles. After the noodles are ready, rinse the noodles with clean water. Add the various vegetables, shredded eggs, shredded pork and sauce, mix well and serve.
