Prepare materials

Fry the starch until cooked, spread a thick layer of starch on a baking sheet, wash and dry the eggs, and use the rounder end to press out small indentations

Soak the gelatine sheets in ice water until soft

Mix egg whites 10g sugar lemon juice and beat until stiff peaks

Put 37g of sugar syrup into a small milk pot and cook over low heat to 118°C. When the temperature reaches 118°C, take out the gelatine slices and put them into the sugar water. Stir quickly to dissolve

After the gelatine has melted, pour the sugar water into the egg whites and beat at high speed

The Italian meringue is in a state where you can take it out and use it when the container is warm when you touch it with your hands.

Turn the remaining bit into pink color and put them into two squeeze bags.

Squeeze out small meat balls

Use a toothpick to remove the bubbles
