Shredded Pork Tomato Spinach Noodle Soup

When I was a child, my mother would cook me a bowl of warm noodle soup when I was sick. My body would feel warm and my mother's love would still be there.

Mix the dough together the night before and make it slightly softer. Add a small spoonful of oil to the dough, cover it and let it rest for 10 minutes. Knead until smooth and let it rest for 10 minutes (this is the dough that has been awake all night).

Prepare the accessories

Roll out the rested dough into slices, cut into wide strips, and make a slit horizontally.

Put water in the pot and bring to a boil,

Stretch out the dough sheet and place it in a pot of boiling water.

Heat the wok and add oil, add the shredded pork and stir-fry, add cooking wine, sugar, soy sauce, shredded green onion and ginger, and boil the water. After the water boils, add diced tomatoes and spinach, bring to a boil and simmer, add salt, chicken juice, and turn off the heat.
