In my hometown, Laba dishes are made about a week in advance and eaten with Laba porridge on the morning of the 8th of the twelfth lunar month. At this time, the whole village is filled with the smell of Laba dishes. If we find out which family has not done it, neighbors will send it to them. There are often more homes that have not done it than those that have done it. This kind of Laba dish can be eaten until the Chinese New Year. Today's Laba dish, I made it in my own way and made improvements. Because it is traditional to put a lot of salt and vinegar in order to keep it for a long time. We don't eat it that way now, so we use it this way. It's sour, sweet, crisp, tender and refreshing.

Then add sugar and knead again, and finally add vinegar and knead evenly. Salt: Sugar: Vinegar: 1:1.5:2. First add salt according to the usual amount for cooking. Then add sugar and vinegar to create a delicious sweet and sour taste. Taste and adjust. Don't make it too salty, fix the salt first.
