This dish is very famous in Inner Mongolia and Northeast China, but it is rarely available now. This taste can only be enjoyed in winter. When I was a guest at someone else's house many years ago, this must be the dish on the table: the stupid half-pound stir-fried melon. You will definitely laugh when you see this. Why is this dish called such a name? Yes, I have never seen it in a restaurant. There may be no place to buy this ingredient. This melon is available for sale. In fact, it is the pickled salted cucumber in the countryside. It is also called melon in the local area. I don’t have it at home. I went to several markets to buy it. However, I always felt that it didn’t taste like the one in my hometown, so I had to leave it like this. Fortunately, the finished product did not disappoint me. Silly Banjin is also called sand chicken and sand grouse. Silly is that it often lies dormant when it is frightened in wild conditions. It will not fly hurriedly until a person approaches, but it will fly not far away and then descend into the bushes. Half a catty means it won't grow big, it's only as big as a fist, which is about half a catty.

The silly half catty is prepared in advance. The head, claws and tips are removed. The salted cucumbers are pickled in salt, not pickled cucumbers

Salty cucumbers are very salty. Cut them into slices, then put them in water and grab them repeatedly. This will quickly remove the salty taste, and then change the water and soak them for a while

Remove the big bones by half a pound, then smash the fine bones with the back of a knife, and then chop them into minced meat (I used a meat ax to chop)

Put the chopped meat into a large bowl, add 2 tablespoons of water and mix well, add cooking wine and minced ginger, mix well and marinate for 10 minutes to remove the smell

Take out the salted cucumber and chop into pieces

Heat oil in a pan, add chopped green onions and stir-fry until fragrant, add peppercorn noodles to bring out the fragrant aroma

Add the cucumber first, then the meat, turn on low heat and stir well

Stir-fry over medium heat, add broken dried chili peppers, stir-fry until the color of the meat turns white and no moisture is visible, add 4 tablespoons of water, cover and simmer over low heat for a few minutes, stirring halfway

When it's a little dry, add soy sauce to enhance the color, add minced garlic and stir-fry to enhance the aroma

Finally, add the chopped chili and peanuts, mix well, stir-fry until a little red oil comes out, then turn off the heat
