Pan-fried Crispy Leather Fish

Whether it's braised, steamed, dry-roasted, sweet and sour, or fried, my family and I love to eat hairtail fish. Today I'm going to make the medium-crispy hairtail fish with a crispy skin

Wash the hairtail fish and cut it into sections. Marinate it with pepper, cooking wine, green onions and ginger for 20 minutes to remove the fishy smell (essential for cooking fish and seafood)

After 20 minutes, pour out the marinated water, sprinkle with pepper powder, and mix with salt (it tastes more fragrant this way, of course you can leave it out if you don’t like peppercorns)

Prepare some flour (regular flour, remember, it is not starch!). Stick a thin layer of flour on the fish pieces

Heat oil in a frying pan and fry the fish until golden brown on both sides

Chop some chili peppers

Push the fried fish to the edge of the pot, add scallions and ginger (scallions and ginger for pickled fish) and chopped chili until fragrant

Finally, stir-fry the fish until it tastes delicious
