Steps
-
Bread ingredients are ready
-
Put all the ingredients except butter into the bucket of the chef's machine
-
After the dough is formed, add softened butter and continue kneading
-
After the film can be gently pulled out, the kneading is completed, the dough is rounded into a large bowl, covered with plastic wrap in a warm and humid place for basic fermentation (I seem to have forgotten to take the photo of the dough rounded into the large bowl)
-
While the dough is fermenting, prepare the filling: put the cream cheese and carrot puree into a mixing bowl
-
Beat it with an electric mixer until smooth
-
Add grated coconut and mix evenly with a spatula
-
When the dough has doubled in size, dip your fingers in flour and poke holes on the top of the dough. If it does not collapse or shrink, it means the fermentation is successful
-
Take out the dough, place it on the kneading mat, deflate the dough and roll it into a round shape, then let it rest for 10 minutes
-
Roll the dough into a rectangular sheet about 5 mm thick
-
Spread the carrot cheese filling evenly on the dough sheet, leaving a little blank space at the edge
-
Roll the dough into a roll and seal tightly
-
With the seal facing the side, use a sharp knife to cut the roll into two parts without cutting off the top
-
With the cut side facing up, twist the two strands into a twist and pinch the ends tightly
-
Transfer the twist dough to a non-stick baking sheet and place in a warm place for secondary fermentation
-
When the dough is nearly twice the original size, brush a layer of egg wash on the surface of the dough and start preheating the oven to 180 degrees
-
Put it into the middle layer of the preheated oven and heat it up and down at 180 degrees for 35 minutes. When the surface color is satisfactory, you can cover it with tin foil
-
After taking it out of the oven, place it directly on the baking sheet to dry until warm, then transfer to a drying rack
