  1. Don’t choose lotus roots that are too tender on the top, otherwise there will be too much water when you dig them out

  2. Grate the thick side of the lotus root into shreds, and grind the ginger into puree

  3. Add salt, pepper, MSG and green onions and mix well. Don't make it too salty, otherwise the fresh and sweet taste of the lotus root will be lost

  4. Squeeze out the overflowing water, form into balls and fry in hot oil until golden brown

  5. It’s really delicious when dipped in chili sauce
