Stir-fried cantaloupe
Overview
Every time I eat cantaloupe, I have to cut off the thick rind, which always feels like a waste. I have fried watermelon rind before, so I wanted to try cantaloupe. After it was served, my family guessed it was fried lettuce, haha!

Remove the outer hard skin of cantaloupe first.

Use a knife to peel off layers of green skin until only the yellow part remains. What we need to use is this layer of green leather

Chop green onions.

Pour a little oil into the pot, add green onions and sauté until fragrant.

Add melon rind and stir-fry, season with salt, white pepper, and chicken essence.

If you don't like pepper and chicken essence, you can leave it out. Just add salt and it will be just as delicious.
