Mini Fruit Naked Cake
Overview
This is a cake made for my parents on their wedding anniversary. Because my parents are older and can’t eat more cream, I chose a naked cake. I also added a lot of fresh fruit. I hope their love will always be sweet! The whole family of three had a great time eating this cake! Still blowing out candles together.

Heat whole eggs, egg yolks, and caster sugar while stirring over water until about 40 degrees Celsius.

Continue to beat until the dripping egg batter does not disappear easily

Sift in the flour in 2 batches. Use a hand mixer to mix evenly.

Line a baking pan with baking paper.

Then add the heated butter to the batter. Pour the batter from high into a baking pan lined with greased paper. Smooth the surface.

Put the baking sheet into the oven, heat up and down at 180 degrees, and set the middle layer for 15 minutes

After the cake is baked, drop it onto the countertop from a high place to release the heat. Pull the baking paper along the way and drag the cake piece to the drying net to cool. Then turn the cake piece over and peel off the brown skin on the front.

Cut the cake slices horizontally and vertically. Cut off 2cm on each side to form four square cake slices of 12×12.

Pour 100ml of whipped cream into the whipping bowl.

Add 10g of white sugar and beat until texture appears. It can be spread on the surface

Take a piece of cake and spread a layer of cream

Then pile on a lot of fruits, layer by layer, to complete four slices of cake.
