Homemade sweet and sour chicken balls with lotus root
Overview
I suddenly wanted to eat pineapple sweet and sour chicken balls at home over the weekend, but I had pineapple at home and it was raining outside so it was difficult to go out to buy it. After my wife suggested using lotus root instead of pineapple, I tried to make this sweet and sour chicken ball with lotus root cubes. It tastes good, convenient, affordable and home-cooked~~~

Steps
-
First prepare the ingredients
-
First remove the bones from the chicken legs. I don’t usually remove the chicken bones. Please forgive me if they don’t look good
-
Cut the chicken legs into small pieces, add appropriate amount of salt, cooking wine, and dry starch, and marinate evenly with your hands
-
Peel the lotus root and cut into small pieces, tear the bell pepper into small florets
-
Mix Heinz ketchup and sugar with appropriate amount of salt and water to make a sauce
-
Put oil in the pot. When the oil is 70% hot, add the marinated chicken balls
-
Fry the chicken balls until they turn yellow, then remove and drain away the oil
-
Blanch the lotus root pieces in hot water for a while, then remove them and control the water
-
Leave the oil in the pot and sauté the chopped green onions until fragrant
-
First add the blanched lotus root cubes and stir-fry
-
Add the bell peppers and continue to stir-fry
-
Stir fry for a while and add the prepared sauce
-
After the sauce boils, add the fried chicken balls
-
When the sauce thickens and the chicken balls are evenly coated with the soup, turn off the heat and take out the pot~
