Peel the potatoes and shred them (it doesn’t have to be too thin), wash and shred the green peppers.

Pour an appropriate amount of water and salt into a cooking pot, then add shredded potatoes after boiling. Cook over medium heat for 4 minutes, then drain off the water and set aside.

Heat oil in a wok, add shredded green pepper and stir-fry.

Because green peppers are not easy to fry, it is recommended to pour a tablespoon of water, and steam will quickly form in the pot. Continue adding a tablespoon of water until completely evaporated. Until the green pepper is soft and the skin is slightly white

Pour in half-cooked shredded potatoes and a little light soy sauce. Be gentle when turning to avoid breaking the potato shreds.

The shredded potatoes are ready to be cooked. I personally like the burnt flavor, so I fry it for a while. Some of the potato shreds are slightly burnt, with a strong burnt aroma.
