Cut the chicken wing base around the chicken bone.

Shave off top of chicken.

Cut the chicken into cubes.

First mix with salt and a little cooking wine.

Add oyster sauce, thirteen spices, and corn starch.

Wear disposable gloves and grasp well (it feels like the flavor will enter quickly when mixed well with your hands)

Wash the Xiaohuagu black fungus with water in advance.

Blanch the black fungus in advance and take it out.

Heat the oil in the pan, put the chicken in the pan until it changes color and take it out (it will be braised later)

Leave oil at the bottom of the pot and add ginger.
