Garlic oil
Overview
Someone in my family loves to eat garlic. Every time I make cold dishes, noodles or stir-fries, garlic paste is indispensable. After seeing the garlic paste oil in a hot pot restaurant, I thought I could make some myself, which saves me the trouble of peeling and chopping garlic every time. I made this homemade garlic oil in the afternoon, and the whole house was filled with the aroma of garlic oil. I flew to my friend’s house in the evening and rushed to the door. I said I would lose weight and would not eat in the afternoon. My friend said, who are you kidding! You smell of hot pot all over your body...!

Peel the garlic, wash and dry;

Cut half an onion into shreds and green onions into sections;

Pour the garlic into an electric mixer and break it up, but don’t make it too minced;

Pour vegetable oil into the pot, add shredded onions, scallions, star anise, cinnamon, bay leaves and aniseed. Stir continuously and carefully over medium-low heat as the oil heats up;

Fry over medium-low heat until golden brown;

Drain the oil, take it out and set it aside;

Fry until minced garlic turns golden brown;

Turn off the heat and let it cool slightly, add a spoonful of salt and a spoonful of fine sugar and mix well. If you want it to be more fragrant, you can add a little sesame oil to taste;
