Spicy shrimp with soup

Ginger, onion, garlic, millet and pepper.

Use a toothpick to remove the shrimp threads, wash and set aside.

Heat an appropriate amount of oil, add ginger, onion, garlic, millet pepper, Sichuan peppercorns, and a few pieces of rock sugar. (I happen to have no rock sugar at home, so I put in an appropriate amount of white sugar)

Fry until fragrant.

Pour in appropriate amount of water and bring to a boil.

Season with appropriate amount of salt, light soy sauce, dark soy sauce and chicken essence.

Add fresh shrimps.

Stir-fry the shrimps over medium-low heat until they turn red. Be sure not to fry them (the shells of the shrimp will turn white and leave the body, making them old and unpalatable)

Sprinkle with coriander.

Stir fry evenly. Turn off the heat and serve.
