Pineapple Baked Rice

Cut the pineapple in 1/3 and hollow it out,

Dice bell pepper, dice onion, dice carrot, dice pineapple, peel and devein shrimp,

Heat oil in a pan, sauté onions until fragrant, add shrimps,

Stir-fry until it changes color, pick it up,

Add diced carrots, bell pepper and pineapple, stir-fry for a while,

Add the slightly heated overnight rice, stir-fry, and season with appropriate amount of salt,

Before serving, add the shrimp and stir evenly. Place it in a hollowed-out pineapple. Sprinkle a layer of grated mozzarella cheese on top. Place it in a preheated oven at 200°C and bake for about 5 minutes. The cheese on the surface is melted and golden brown.
