Cut off the roots of enoki mushrooms and wash them.

Cut the enoki mushrooms into sections, soak the tomatoes in hot water, peel them and chop them finely.

Pour cooking oil into the pot to heat, add onion and garlic and stir-fry until fragrant.

Add Pixian bean paste and tomato paste and stir-fry until red oil comes out.

Pour in tomatoes and stir-fry for about 2 minutes, then add appropriate amount of water or stock.

Add the enoki mushrooms and bring to a boil, cooking for about 5 minutes.
