Remove the stems of the mushrooms, wash the sediment, and cut into 0.5 cm wide strips for later use.

Clean and chop onions and ginger and set aside.

Heat up the wok, pour in cooking oil to heat, pour in the egg liquid, stir-fry, and break into small pieces before serving.

Heat up another pot with cooking oil, add onion and ginger and stir-fry until fragrant.

Add mushrooms and stir-fry.

After the mushrooms are fried until soft, add salt, a little light soy sauce, dark soy sauce, and sugar to taste.
