Home version of grilled cold noodles
Overview
Grilled cold noodles originate from Mishan City, Jixi City, Heilongjiang Province. They are a local specialty snack in Heilongjiang. At first, there were many methods, including deep-frying, rolling with high-temperature iron plates, etc., and later modified to frying and grilling on iron plates. Nowadays, grilled cold noodles have become popular all over the country and are a unique delicacy in Northeast China.

Chop green onions and coriander.

Put vinegar and sugar in a bowl, add appropriate amount of water and stir evenly.

Brush the pan with a little cooking oil, add bacon and ham and fry until golden brown on both sides.

Brush a little more cooking oil into the pot, spread the cold noodles flat on the bottom of the pot and fry for about 10 seconds.

Beat in the eggs and quickly spread the egg mixture.

When the eggs are slightly set, turn the cold side over, egg side down, and brush with sweet and sour water.

Let the sweet and sour water absorb for a while, then brush with barbecue sauce (you can also adjust your own sauce).

Put the fried bacon and ham sausage (or not), sprinkle with barbecue seasonings (or cumin powder, chili powder, etc.), coriander and chopped green onions.
