Kimchi Pork Liver Soup
Overview
Pork liver nourishes blood and qi, and is rich in nutrients. It is paired with some kimchi to remove the fishy smell and improve the freshness.

Cut the pork liver into thin slices.

Add water, starch and cooking wine.

Mix well and marinate for 5 minutes.

Pour in water to open the pork liver, cook for 30 seconds to set, remove from the pot and set aside.

Wash the pot, add pickled ginger and pickles and bring to a boil.

Boil the water, add the pork liver, and add the garlic and onion.

Add salt and chives.

Cook over low heat for 2 minutes.

Add chicken essence and sesame oil.

Take it out of the pan, it's tender and delicious.
